Instructions

Step 1
Preheat oven to 350 degrees. Trim greens and roots from beets. Scrub under cool water (peeling not necessary) Chop beets into large, 1” pieces Place chopped beets in a large bowl. Season with salt and pepper. Drizzle with olive oil and toss to coat. Lay out a large piece of aluminum foil, line with parchment paper. (Or place beets in a greased baking dish and cover. Fold aluminum into large packet and fold ends to seal. Roast in oven for 1 hour or until beets are tender when poked with a fork. Remove from oven, slit packet open with a knife (CAUTION: it will be hot!) and allow to cool. Dump cooled beets in a large bowl and crumble feta cheese on top and gently stir in.
