Caramelized Pork ribs with eggs. This is a Vietnamese/Lao comfort dish that I grew up eating. There are so many diff ways to make this but the main ingredients are pretty similar. I love using quail eggs in my recipe because you get that bite sized egg with every bite!

Step 1
On medium heat, add oil and sugar and cook until it is a nice golden brown color. Be careful not to burn it or it will taste bitter. If it’s burned, toss it out and start over. Once the sugar has caramelized, add the ribs and cook for a few minutes. Once it’s browned, add garlic, shallots and cook for a few minutes. Add fish sauce, oyster sauce, black pepper and coconut soda/water. Cover and simmer for another 20 minutes, stirring occasionally to keep that nice caramel color. Add eggs and cook for another 10 minutes. Taste and adjust the sauce if needed. Top with green onions and serve this with steamed rice and sliced cucumbers!
