Instructions

Step 1
Heat a small, non-stick frying pan over a medium heat and add the olive oil

Step 2
While the pan is heating up, crack the eggs into a measuring jug and ad the salt and chilli flakes. Beat them all together with a fork.
Step 3
Add the egg mixture to the pan and stir immediately with a spatula. The eggs should start to cook straight away. Add the grated cheese.
Step 4
Keep moving the eggs so they don't cook too much but firm up. You are aiming for smashed up omellete texture rather than runny scrambled eggs.
