Important Cooking Notes
- Slice the chicken into smaller cubes than usual. Make sure it’s well seasoned! Add more seasoning if needed
- Make the buffalo sauce & side salad in advance. You can bottle and store the sauce in the fridge for other meals and store the salad in a container
- Store the salad separately to the chicken and potatoes. Makes it easier when reheating
- Reheat chicken and potatoes in an air fryer for 5-6 mins at 200C. Potatoes come out crispy again
- Cook the chicken in light butter or cooking spray till golden and charred then Very Important lower the heat before adding the buffalo sauce in the pan. Let it mix and coat in the heat

- Slice chicken into cubes
- Season with salt, parsley, garlic powder, cumin, paprika, and olive oil
- Mix well

- Slice potatoes into cubes
- Use the same seasoning mix: salt. paprika, garlic powder, parsley, cumin
- Coat with olive oil (optional) or cooking spray
- Mix well
- Bake or air fry 18-20 minutes at 400F

- Cook chicken on MEDIUM - HIGH heat for 6-8 minutes in half of the butter
- LOWER HEAT
- Add buffalo sauce + the rest of the butter
- Mix until coated

- Add tomatoes, red onion, cucumber, green onion, parsley, salt, pepper, garlic powder, cumin, and lemon juice to a mixing bowl
- Mix

- For the side sauce, add buffalo sauce, low fat yogurt, light mayo, and honey to a bowl
- Mix
