Ingredients

280gdry pasta
300gBroccoli
1red onion
medium
200g50% reduced fat garlic and herb cream cheese
100mlreduced fat crème fraiche
400mlvegetable stock
60gParmigiano Reggiano
2 tspminced garlic
½ tspsalt
½ tsppepper
1 tspsmoked paprika
1 tspcajun seasoning
1 tspwhole grain mustard
½ Tbspolive oil
fresh parsley

Instructions
Step 1
Slice the red onion into thin strips and fry for 3-4 mins in the olive oil.
Step 2
In the mean time, slice up the broccoli by chopping the stem into small chunks and slicing the florets into bite size pieces.
Step 3
Add the broccoli to the pan and fry for 5 mins with the onion.
Step 4
Add the garlic and fry for a further minute.
Step 5
Then add in the vegetable stock, the cream cheese and the creme fraiche and mix together.
Step 6
Then season the sauce with salt, pepper, smoked paprika and Cajun and then spoon in the mustard.
Step 7
Mix all together which should darken the colour of the sauce and then simmer on low / medium for around 8 mins to thicken and cook the broccoli.
Step 8
Whilst the sauce is thickening, cook the pasta in some salted water and then drain reserving some of the pasta water.
Step 9
Now add the pasta water into the thickened sauce to loosen it up, followed by pouring the cooked pasta.
Step 10
Finally, add in the chopped parsley and lemon juice before stirring and serving into four equal portions.
