Halloumi Linguine

This creamy halloumi pasta is one of them fool proof, easy recipes you’ll come back to again and again because it’s just so damn gooood 🔥 Ingredients to serve 1: 80g dry weight linguine 30g reduced fat halloumi 1/2 red onion 2tsp lazy garlic 120ml veg stock 2tsp tomato purée 50g reduced fat soft cheese 1tsp paprika, Italian herbs and 1/2 tsp chilli flakes for a bit of a kick! Method: Start by frying off your garlic and onion until fragrant, then add in your halloumi. Start cooking your linguine at this point too. Season the halloumi and onion with the paprika, Italian herbs, chilli flakes if using and a pinch of salt and pepper. When the halloumi is browned, add in the veg stock along with the soft cheese and tomato purée and keep on a low to medium heat till a nice sauce begins to form. Add in your pasta and give it all a stir, if the sauce is too thick add in some pasta water. Leave for a few minutes until the pasta soaks up the sauce and serve. Instructions

Step 1
Start by frying off your garlic and onion until fragrant, then add in your halloumi. Start cooking your linguine at this point too. Season the halloumi and onion with the paprika, Italian herbs, chilli flakes if using and a pinch of salt and pepper.

Pour any left over sauce over the top!
