Unstuffed Bell Peppers

Do you like the flavors of stuffed bell peppers, but not the task of hollowing out a bell pepper and filling it? Then this is the recipe for you! I typically serve this with cheese and rice.

Instructions
Step 1
Dice onion and peppers into small pieces
Step 2
Put a bit of oil in a pan and place it on the stovetop at medium heat
Step 3
Add onions and peppers to the pan and cook until soft/translucent. Season as you please. I usually add a spoon of minced garlic
Step 4
Transfer peppers and onions to a separate container. Add your ground beef and chorizo (or whichever meat you would like) to the pan. Combine them thoroughly while cooking. Season as you please (I typically add a fajita seasoning packet)
Step 5
When the meat is mostly cooked through, turn your heat to low. Add your veggies back in and combine thoroughly while the meat finishes cooking
Step 6
Serve with Mexican cheese and rice
