12chicken drumsticks
3 tablespoonsolive oil
1 ½ teaspoonssalt
1 ½ teaspoonsblack peppercorns
crushed
1 ½ teaspoonsdried oregano
1 ½ teaspoonspaprika
1 teaspooncumin
1 teaspooncoriander powder
7 clovesgarlic
crushed
5 slicespreserved lemon
finely chopped
2lemons
Zest and juice of
¼ cupGreek yogurt

Instructions
Step 1
Pat dry the chicken drumsticks with paper towels.
Step 2
In a bowl, combine olive oil, salt, crushed black peppercorns, dried oregano, paprika, cumin, coriander powder, crushed garlic, preserved lemon, lemon zest, lemon juice, and Greek yogurt (if using).
Step 3
Toss the chicken drumsticks in the marinade, making sure they are well coated. Allow the chicken to marinate for at least 30 minutes, or refrigerate for 2 to 4 hours for best results.
Step 4
Preheat the oven to 180°C (350°F).
Step 5
Place onion rings on a baking tray and arrange the marinated chicken drumsticks on top.
Step 6
Bake in the preheated oven for 45 minutes, or until the chicken is fully cooked.
Step 7
If desired, broil the chicken for a few minutes until the skins are crispy.
Step 8
Serve the baked lemon pepper chicken drumsticks hot and enjoy!
