Instructions

Step 1
**Prep Potatoes**: Wash potatoes and cut them into medium-sized cubes.

**Prep Peppers**: Wash and deseed the peppers. Adjust the deseeding of jalapeños based on your heat preference.
Step 3
**Marinate Potatoes and Peppers**: Put half of the olive oil into a zip-lock bag. - Add half of the listed spices. - Add the cubed potatoes and peppers to the bag. - Mix well and place in the fridge to marinate. This step can be done in advance.

4. **Marinate Chicken**: Put the remaining olive oil and spices into another zip-lock bag. - Add the chicken breasts. - Mix well and place in the fridge to marinate for as long

5. **Prepare Baking Sheet**: Line a large baking sheet with tinfoil. - Preheat the oven to 450°F (230°C).

6. **Arrange on Baking Sheet**: Place the chicken on one side of the baking sheet. - Place the marinated potatoes and peppers on the other side.

7. **Bake**: Cook in the oven until the potatoes are fork-tender and the chicken is cooked through, about 50 minutes.

8. **Prepare Sauce**: Once cooked, remove the peppers from the baking sheet and place them in a blender. - Blend until completely smooth. - Add a can of coconut milk to the blender and blend until well mixed.

9. **Broil Chicken**: Place a slice of mozzarella cheese on top of each chicken breast. - Broil until the cheese is melted and bubbly.

10. **Serve**: Plate the chicken with the potatoes. - Pour the pepper-coconut sauce over the chicken.
