Cheesy Scalloped Potatoes

These scalloped potatoes come from my grandmothers arsenal. Cheesy, savory, and rich in flavor! They never disappoint with their layers of cooked potato in between cheese and a homemade roux.

Instructions

Step 1
Preheat oven to 400°F. Butter a 9”x13” baking dish.
Step 2
In a pot over medium high heat sauté onion and garlic in butter until onions are translucent & slightly browning (3 -4min). Add the flour and cook in the pan for 1-2 mins whisking constantly so it does not burn; slowly pour in the milk 1/2 cup at a time, whisking constantly. Shred your cheese and set aside.
Step 3
Add the salt, pepper, and thyme and cook for 3-4 more minutes ONLY as you don’t want a brown rue (still whisking constantly) until the sauce thickens. Remove from heat. Slice your potatoes to 1/8 inch thick or 3mm thick using a mondolin.
Step 4
Layer 1/3 of the potatoes in the baking dish and top with 1/3 of the cream sauce and 1/3 of the cheese. Repeat and layer two more times, then cover with foil.
Step 5
Bake covered for 45 min, remove foil and bake uncovered 30-35 min until potatoes are fork tender and browned on top. Garnish with parsley and crushed red pepper if desired. Let sit for 15 minutes then serve.
