Ingredients

2 Tbspolive oil
1yellow onion
medium, diced
2carrots
medium, diced
2celery ribs
diced
1 lbground beef 85/15
meat to fat ratio
6garlic cloves
8 oztomato paste
28 ozcan crushed tomatoes
½ cuppomegranate juice
1 cupbeef stock
1 Tbspdried oregano
2 Tbspdried parsley
salt
fresh ground black pepper
¾ cupwhole milk
2 Tbspdried basil
Instructions
Step 1
Heat oil in large saucepan over medium heat. Add onions, carrots, and celery and saute until softened.
Step 2
Add beef, breaking down clumps as it cooks. Add seasonings and cook for 1 min. Add garlic, cook another 30 seconds.
Step 3
Add tomato paste and stir thoroughly to combine before continuing.
Step 4
Add beef stock, crushed tomatoes, and pomegranate juice. Bring to a simmer, lower heat, and then cover with a lid. Cook for 1 hour.
Step 5
After one hour, add milk. Allow to cook for another 45 min - 1 hour.
