Instructions
Step 1
Heat avocado oil in a skillet over medium-high. Add riced cauliflower and cook for 5 minutes to soften. Remove from the heat and allow to cool.

Place the nori on your sushi mat or on a piece of plastic wrap

Using damp hands, spread the cauli rice over the nori, leaving 1/4 inch free around the edges. Arrange avocado, cream cheese, and cucumber evenly across the quarter of the cauli rice nearest you
Step 4
Starting at the nearest edge, gently roll the nori around the filling, using the sushi mat or your hands to tightly enclose the contents. Dab a bit of water on the trailing edge of the nori to seal the roll. Place the roll on a cutting surface, removing the sushi mat.
Step 5
Arrange the sushi on a platter and sprinkle with sesame seeds. Serve with tamari sauce for dipping.
