Mixing the mascarpone with yoghurt helps keep things light, but it's important to use a thick greek yoghurt so the filling is not too runny.

Instructions

Step 1
Put the mascarpone, yoghurt and honey in a mixing bowl and whisk together until just combined. Pile into the pastry case and spread it out with the back of a spoon.
Step 2
Halve the peaches. Remove the stones and slice.
Step 3
Arrange the sliced peaches and raspberries over the pie filling. Drizzle over extra honey.
Step 4
To serve, sprinkle over toasted flaked almonds or chopped pistachios, if liked.
