Step 1
Preheat oven to 375
Step 2
Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 4 cups of shredded Cheddar cheese a handful at a time. Season sauce with nutmeg and Tabasco. Taste and add a little salt, if you like.
Step 3
Put cooked pasta in baking and/or casserole dish. Cover in sauce and spread evenly.
Step 4
Cook for 15 mins
Step 5
Lower temperature of oven to 350
Step 6
Add remaining cheese and crackers to the top of the pasta
Step 7
Cook for 15 mins or until cheese is bubbly
