Chicken
300gChicken Breast Cubes
1 TbspGarlic Power
1 Tbsppaprika
1 TbspOregano
1 tspCumin
½ tspChili Powder
1 tspsalt
1 tspPepper
1 TbspLime Juice
In The Pan
cooking spray
or olive oil
1Onion
medium, Chopped
0.5Red Bell Pepper
60gBlack Beans
110gBasmati Rice
Washed, Uncooked
1 tspGarlic Power
1 tspOregano
1 tspCumin
½ tspChili Powder
1 tspsalt
1 canChopped Tomatoes
¾ cupWater
Garnish
Instructions
Step 1
Cube up the chicken breast, season with garlic powder, paprika, oregano, cumin, chili powder, salt, pepper and lime juice. Mix well, if it doesn't change color, it's not well seasoned!
Step 2
Get a pan on high heat, spray oil and cook the chicken for 3 mins then add chopped onions, bell pepper and black beans. Cook that for another minute.
Step 3
Add washed uncooked rice with more of the same seasoning you used for the chicken. Toast the rice for a minute then add 1 can chopped tomatoes and water.
Step 4
Bring to a boil then lower the heat, simmer for 12 mins until rice is cooked. Check halfway, mix the rice so it doesn't stick to the pan! Garnish with green onion, coriander, lime and ENJOY!
