Step 1
In a skillet, add chicken breasts strips and stir in ½ cup of the taco sauce. Cook for 4-5 minutes on medium heat. Remove and allow to cool a bit.
Step 2
Cook red onions and peppers in the pan until grilled. Set aside.
Step 3
Slice the bottom part of the tortilla with a knife to create a flap.
Step 4
Divide tortilla into 4 triangles. Add taco sauce and cheese to one section, chicken strips to the other, grilled vegetables to the next and shredded cheese and taco sauce to the last section.
Step 5
Grabbing the cut part of the tortilla, fold the cheese section onto the chicken section. Then fold that section onto the grilled vegetables portion. Finally, fold that last section onto the cheese.
Step 6
In a medium skillet, add a bit of olive oil. Place the tortilla triangle and cook on medium heat for 3-4 minutes per side, or until the cheese melts and the tortilla browns slightly.
Step 7
Continue with the remaining quesadillas.
Step 8
And Voilà! Serve with your favorite toppings.
