Taco Soup or Salad
This recipe can become a soup for cooler days or a salad for warmer ones. For the soup, you will need some homemade Bone Broth. For the salad, use lettuce instead.

Ingredients
1 servings

3 ozground beef

2 Tbspextra-virgin olive oil

1clove garlic
minced

1 tspchili powder

1 tspground cumin

salt
to taste

pepper
to taste

1 ½ cupsbone broth

2 cupsshredded lettuce

1tomato
diced

avocado
sliced, for garnish

jalapeno peppers
sliced, for garnish

cheddar cheese
grated, for garnish

green onions
sliced, for garnish

sour cream
for garnish

apple cider vinegar
to taste
Instructions
Step 1
Heat a skillet over medium heat, then add ground beef, olive oil, garlic, chili powder, cumin and a dash of salt and pepper. Cook until beef is browned and remove from heat
Step 2
For the soup, bring bone broth to a boil in a pot over medium-high heat. Add the beef mixture, stir in the tomatoes, and remove from heat. Ladle into a soup bowl and garnish as desired with avocado, jalapenos, cheese, green onions, and sour cream
Step 3
For the salad, arrange lettuce in a salad bowl. Pour the beef mixture over the lettuce. Sprinkle tomatoes on top. Garnish with avocado, jalapenos, cheese, green onions, and a dollop of sour cream. Drizzle with olive oil, add a splash of vinegar, and season to taste with salt and pepper if desired
