Instructions
Step 1
Place oven rack in center position, and preheat to 375F. Grease a 12-cup muffin pan with cooking spray. (for best results, use a silicone pan)
Step 2
In a large bowl, beat eggs until frothy. Add lemon juice, water, lemon zest, and vanilla, and beat to combine.
Step 3
Add all remaining ingredients and mix well to create a batter. Be sure to eliminate all lumps of flour!
Step 4
Fill each muffin cup. (original recipe says 2/3 full. Mine were TO THE TOP.)
Step 5
Bake 20 to 25 minutes, until tops turn light golden brown and a toothpick stuck into the center of one comes out mostly clean.
Step 6
Cool in pan on a wire rack. For best flavor, serve chilled.
