1can black beans
drained and rinsed
1 canblack-eyed peas

1 cupcorn kernels
fresh, frozen, or canned
½ cupred bell pepper
diced
½ cupgreen bell pepper
diced
½ cupred onion
diced
1 cupcherry tomatoes
quartered
1avocado
diced, added just before serving
¼ cupfresh cilantro
chopped
¼ cupolive oil
3 tablespoonslime juice
use some to coat the avocado
1 tablespoonred wine vinegar
1 teaspoonchili powder
½ teaspooncumin
salt
to taste
pepper
to taste
Instructions
Step 1
1. **Prepare the Vegetables**: In a large bowl, combine the black beans, black-eyed peas, corn, red bell pepper, green bell pepper, red onion, cherry tomatoes, and cilantro.
Step 2
2. **Make the Dressing**: In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, chili powder, cumin, salt, and pepper.

3. **Combine and Chill**: Pour the dressing over the vegetable mixture and toss to coat. Cover and refrigerate for at least 1 hour, but overnight is even better to allow the flavors to meld.
Step 4
4. **Prepare the Avocado**: Just before serving, dice the avocado and toss it with a tablespoon of lime juice to prevent browning. Gently fold the avocado into the salad.
