Almond croissant baked oats 🥐 turning the viral almond croissant into a healthy brekkie you can enjoy daily!

Ingredients
1 banana, mashed
1 1/2 cups rolled oats
1 1/4 cups milk of choice
1/2 tsp baking powder
1 tsp almond essence
1/4 cup almond meal
1/3 cup slivered almonds
For the almond paste:
1/3 cup almond butter
2 tbsp maple syrup
1 egg
1/4 cup almond meal
1/2 tsp almond essence
Method:
1. Preheat the oven to 190C and grease a baking dish. I use a glass 6 x 6 inch dish.
2. Make the almond paste by whisking all ingredients in a bowl.
3. Add the mashed banana to your baking dish along with the oats, almond meal, baking powder, essence and milk. Stir to combine and allow to sit for a few minutes.
4. Dollop the almond paste over the oat mixture and sprinkle with the slivered almonds.
5. Place into the preheated oven and cook for 35-40 mins or until golden and springy to touch.
6. Allow to cool slightly before cutting into 4 slices. Sprinkle with icing sugar if desired (obviously a must).
