Instructions
Step 1
Hard boil the eggs: Place the eggs in a single layer in a saucepan and cover them with cold water.
Step 2
Bring the water to a boil over high heat. Once boiling, remove the pan from the heat, cover it, and let the eggs sit for 12 minutes.
Step 3
Then, drain the hot water and immediately run cold water over the eggs to stop the cooking process.
Step 4
Peel the eggs once cool enough to handle.Tip: You can also steam the eggs for a foolproof hard-boiling method. Steam them for 15 minutes for perfectly set yolks.
Step 5
Prepare the filling: Cut the peeled eggs in half lengthwise and carefully remove the yolks.
Step 6
Place the yolks in a bowl and mash them with a fork until smooth.Tip: Use a pastry cutter or a potato masher for a finer crumble if desired.
Step 7
Mix the filling: Add the mayonnaise, Dijon mustard, smoked paprika, salt, and pepper to the mashed yolks. Stir until well combined and creamy. Taste and adjust seasonings as needed.
Step 8
Assemble the deviled eggs: Spoon the filling mixture back into the egg whites.
Step 9
Garnish with chopped chives (optional) and serve immediately or store in the refrigerator for up to 3 days.
