Stuffed Cucumbers

A healthy, refreshing appetizer for any special occasion. Especially great for diabetics as each appetizer has only 1g carbohydrates. Makes 24 appetizers.

Instructions

Step 1
For decoration, use knife or vegetable peeler to remove small strips of cucumber peel lengthwise.

Cut cucumber into 1/2” slices. Hollow out the center of each slice using a spoon or melon baller, leaving a 1/8” bottom.

In a small bowl combine all filling ingredients; blend well.

Spoon or pipe filling into cucumbers using about 1 tsp filling for each.

Refrigerate until serving time. Garnish as desired.
