-Saute the bacon with some olive oil, let that cook up a bit first- not crispy, but almost.

-Add in the Sofriot packets and stir with some Oregano - just to what looks like a well-seasoned sofrito 'look"

-Once you feel that the sofrito is well seasoned and somewhat cooked together, add your chicken broth; let this come to a boil

-Add in your rice (3-4 cups) for the count you have

-once this is "dry" and you are going to turn, add your gandules to the pot and turn/stir when you are turning your rice.
