Instructions
Step 1
Cut off fat from roast and cut in chunks. Freeze till a little fiem and grind lean chunks in meat grinder.
Step 2
Mix in all other ingredients and refrigerate.
Step 3
Cut beef fat off. Can be used to make tallow later. You can add some bacon to this for flavor. Add in some oil or beef tallow to the meat mixture.
Step 4
Add the bacon greese back into the beef mixture.
Step 5
Form into sausages and wrap in bacon strips. You can wrap these in plastic wrap.
Step 6
Refrigerate 12 hours or overnight. Then either bake or freeze for later.
Step 7
To cook the sausages, bake at 350 for 25 minutes or so.
