Instructions
Step 1
Boil peeled and chopped potato and corn in a pot
Step 2
Chop bell pepper, tomoato and any other veggies
Step 3
Once potato pieces are cooked well, keep corn cob aside to cool and drain the water
Step 4
In the same pot, mash the potato add 1 tablespoon of garlic butter and 2 tablespoons milk, mixing well to a mashed potato consistency. Add salt and pepper to season
Step 5
Toast bread and melt cheese on to it. Alternatively, cheese can be added to the mashed potatoes.
Step 6
Put the mashed potato mixture on the toasted bread and add tomato slices, bell pepper and other veggies. Add any other seasonings (such as Chilli flakes)
Step 7
And the sandwich is ready!
