50mlfish stock
hot

225gpotatoes
peeled and thinly sliced

2skinless salmon fillets

0.5lime juice

1 Tbspdill
chopped

lime wedges
to serve

3spring onions

Instructions
Step 1
Brush the base of the slow cooker with butter
Step 2

Layer the onions and potato in the dish
Step 3
Add the stock and dot with the half the remaining butter
Step 4
Cover and cook on low for 3 hours or high for 1.5 hours
Step 5
Arrange the salmon over the potatoes in a single layer
Step 6

Drizzle the lime juice over and sprinkle with dill
Step 7
Dot the remaining butter over the top
Step 8
Cover and cook on low for a further 1 hour, or high for 30 mins
Step 9
Serve on a warmed plate with juices spooned over and lime wedges on the side
