Step 1
Sauté the vegetables briefly, add the rice and stir till it is coated. Add stock and simmer, with lid on, stirring once to evenly cook rice, adding additional stock if required. Once rice is cooked, sprinkle grated Parmesan evenly over the risotto. Replace lid, turn off heat and leave till cheese has melted. Serve immediately.
