Preheat oven to 350 F and line muffin tin with parchment paper liners. Set aside.

Sauté chopped mushrooms and spinach
Step 4
In a blender or food processor, add eggs, cottage cheese, salt and pepper. Blend until smooth.
Step 5
Add 1tsp of spinach and mushroom mix to muffin tin. Pour egg mixture on top of veggie mix, filling approximately 3/4 full
Step 6
Bake for 20-25 minutes or until toothpick inserted in the middle of center egg bites in the pan comes out clean and tops are slightly golden and egg bites have puffed up.
Step 7
Remove from the oven and enjoy.
