For Frying:
Instructions
Prepare the Dough:
Step 1
In a large mixing bowl, combine the flour and salt.
Step 2
Add the vegetable oil and mix until the mixture resembles breadcrumbs.
Step 3
Slowly add water and knead into a firm, smooth dough.
Step 4
Cover the dough with a damp cloth and set aside for 30 minutes.
Prepare the Filling:

Heat 2 tablespoons of vegetable oil in a pan over medium heat.

Add cumin seeds and let them sizzle for a few seconds.

Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent.

Add the mashed potatoes, peas, coriander powder, turmeric powder, garam masala, red chili powder, and salt. Mix well.

Cook for 3-5 minutes, stirring occasionally. Remove from heat and let it cool.

Add chopped cilantro if using.
Assemble the Samosas:

Divide the dough into 8 equal-sized balls.

Roll each ball into a thin oval or circle, about 6 inches in diameter.

Cut the rolled dough in half to form two semi-circles.

Take one semi-circle, fold it into a cone shape, and seal the edge with water.

Fill the cone with 1-2 tablespoons of the potato filling.

Seal the open edge of the cone by pressing it together, ensuring no gaps.
Fry the Samosas:

Heat enough vegetable oil in a deep pan over medium heat to submerge the samosas.

Once the oil is hot (test by dropping a small piece of dough into it, it should sizzle and rise to the top), carefully add the samosas.

Fry the samosas in batches, turning occasionally, until they are golden brown and crisp.

Remove them with a slotted spoon and drain on paper towels.
