Instructions
Step 1
Slice the onions, peppers, spring onions and garlic. Finely chopped the scotch bonnet.
Step 2
Heat a large frying pan and add a tablespoon of vegetable oil, next add in the sliced onions and cook until soft. Add the garlic and cook for a further minute making sure you don’t burn the garlic. Add in the slices of bell pepper and stir to cook for a further 3 minutes. Pour in the tinned tomatoes and stir, now add in the scotch bonnet, thyme, pimento and all-purpose seasonings and stir, half fill the empty tomato tin with water and add it to the pan, along with the ketchup or tomato paste and stir well. Allow to simmer for about 2/3 minutes before adding in the chopped spring onions and the sweetcorn mix and cook for a further 2 minutes.
Step 3
Plate up, and serve with white rice or fried dumplings. Lick your lips and enjoy.
