Instructions
Step 1
Preheat oven 180°C
Step 2
Line a 8" cake tin or 24 muffin cases

Grate carrots
Step 4
Sift together flour, baking powder, cinnamon and ½ tsp salt into a bowl.

Step 5
In a 2nd, larger bowl, mix together oil, sugar and eggs.

Step 6
Using a wooden spoon, gently incorporate the sifted ingredients into the liquid mixture.

Step 7
Fold in the grated carrots until mixture is evenly distributed.
Step 8
Pour into cake tin and bake for 50-60min
