Instructions

Step 1
1. Take your thawed bird and clean it with warm water.
Step 2
2. Take the skin on the breast and put your hands underneath to separate the skin from breasts.

3. Get a large bowl, large enough so that water can cover your bird completely. Turn on some cold water and drench your bird in salt, once the bird is salted put the bowl under the cold water and gently scrub your salty bird, repeat these steps 3 times.
Step 4
4. Now we brine the bird, just like in step 3 you salt your bird and cover it with cold water. Cover your bowl with plastic wrap and let your bird sit in the brine for an hour and a half at least, for better results let soak over night or even days in advance.
Step 5
5. Now you can remove your bird from the brine and get your seasonings all together, oil your bird then rub with the seasonings all over. Let your now seasoned bird sit and marinate for a little bit.
Step 6
6. While your bird sits and marinates, get your crock pot and put it on high. Put chicken stock and some more seasonings in the bottom of your crock pot. You only need about two inches of liquid your bird will secret a lot more by then end.
Step 7
7. Now if you don't have an injector poke holes in the breasts of your bird and every 30 minutes while it cooks take a sauce brush and brush the chicken stock under the skin of the breasts. If you do have an injector place your bird in the crock pot and inject it with some of your chicken stock.
Step 8
8. Now that your bird is seasoned and your crock pot is ready put in your bird and let her cook for 3-4 hours. You'll know it's done when it falls apart trying to get it out of the crock pot.
Step 9
9. Congratulations your bird is done you can eat your bird as is or my favorite shread it up and make some chicken noodles soup.
Step 10
Note: if you decide to make chicken noodle soup only cook your bird for 3 hours you, don't want to over cook your chicken.
