This step is crucial for crispy fritters. • In a large mixing bowl, combine the grated vegetables, chopped onion, parsley or cilantro, and corn kernels. 2. Make the Batter: • In a separate bowl, whisk together the flour, cornmeal (if using), baking powder, cumin, smoked paprika, salt, and pepper. • In another small bowl, whisk together the egg and milk. If using a flax egg, combine 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for 5 minutes to thicken. • Pour the wet ingredients into the dry ingredients and stir until just combined. • Add the vegetable mixture to the batter and mix until everything is well coated. 3.
