Instructions

Step 1
Pre heat the oven to 180°c (fan)
Step 2
Chop the pumpkin into chucks. Toss with salt, pepper and thyme. Roast for 35 - 40 minutes
Step 3
Grate the pecorino, crumble the feta, and finely chop the fresh herbs
Step 4
Bring the pumpkin out from the oven. Mash, together with the dill, cheese, honey and egg
Step 5
Take a heet of filo. Transfer pumpkin mix to the edge of the sheet then roll. Place into a backing tray.
Step 6
Repeat this until you have used all the pumpkin mix.
Step 7
Brush melted butter over the filo. Sprinkle with sesame seeds, then bake for 25 minutes until the pastry is golden and cooked through.
