125gbrown rice instant
microwaveable

⅓ cupshelled edamame

1 tbmushroom xo sauce

baby spinach leaves

4asparagus spears

1egg

¼ cupvegan kimchi
Instructions
Step 1
In a microwaveable tub dump in the rice, edamame, xo sauce and spinach. Break the asparagus into chunks, and in a microwaveable jug cover with boiling water. Zap for 45 seconds, drain and add in with rest of ingredients. If this is for later, pop a lid on it and stick in the fridge. Using the same jug as for the asparagus, crack in your egg, give it a quick whisk with a fork, and microwave for 40 seconds. Stir to break up into lumps, then put in a small tub. Put your kimchi in another small tub, ready to go. To finish it off, microwave the rice mix for 2 minutes, stirring halfway through. Add and mix in the egg, and either mix in the kimchi or serve on the side.
