Great Salad for meal prep, as mixing the "dressing" in with the quinoa keeps the veggies fresh! Feel free to mix up sauces, dressings, proteins and make it your own!

Instructions

Step 1
Season chicken with garlic powder, salt, pepper, and smoked paprika. You can sub in anything that would match your flavour profile!

Bake chicken at 350 for roughly 30 minutes or until it reaches an internal temperature of 74 deg C

Place chicken into fridge to cool

Cook quinoa in pot as per instructions on the bag

Once the quinoa is cooked, mix in the bbq sauce, dijon mustard, olive oil and apple cider vinegar

Chop up your veggies into bite size pieces
Step 7
Divided into 4 meal prep containers, place the quinoa with the dressing on the bottom, then the chopped romaine and veggies, then the chicken and shredded cheese.
Step 8
Store in fridge for up to 4 days
