Instructions

Step 1
Cook the rice.
Step 2
Season chicken with salt and pepper.
Step 3
Heat a drizzle of oil in a large pan over medium-high heat.
Step 4
Cook chicken to 165ºF, 4-ish minutes per side.
Step 5
Remove chicken & reduce heat to low.
Step 6
Add tamarind sauce, 1⁄3 cup water, and 2 TBSP butter
Step 7
Stir for a minute until melted & combined.
Step 8
Thinly slice chicken crosswise.
Step 9
Serve chicken on rice, drizzle with sauce & garnish with peanuts & limes.
