Cherry and Banana Oat Bake

This dessert will do a much better job of filling you up than most other puddings as it has a low energy density (1.2 kcal/g) and the oats are also a good source of beta-glucans which has been shown to increase satiety. You can also serve this with a low energy dense topping such as Greek yoghurt and the energy density will still remain low.

Instructions

Step 1
If you are using frozen cherries, allow them to thaw and then drain off the juice. Grate the apples and mash the banana. In a large bowl, add the oats, baking powder, spices, apple, banana and mix well. Whisk the milk, maple syrup, egg and vanilla together in a large bowl and then pour this over the oats mixture. Stir this in well so all the oats are mixed in. Place half of the cherries in the base of a medium-sized ovenproof dish or cake tin. Spoon over some of the oat mixture then add some additional cherries. Continue adding the oats and cherries making sure the mixture is spread evenly and levelled off at the top. Bake in an oven preheated to 180C for around 40 minutes , until the oats have absorbed all the liquid and are thoroughly cooked through and golden on top. Serves 6
