Chicken Zosui Recipe (Japanese Rice Soup)

Zosui is a comforting dish made with cooked rice served in a delicious soup flavored with soy sauce or miso. My recipe is made with succulent chicken thigh, crispy chicken skin and umami-rich mushrooms for the ultimate flavour. This will be the best zosui you will ever try!

Ingredients

150gboneless chicken thigh
skin-on, boneless
1 tspcooking oil
1 pinchground black pepper
400mldashi stock
1 Tbspsake
200gJapanese short-grain rice
cooked
30gJapanese leek
white part diagonally sliced
0.5carrot
julienned
2fresh shiitake mushroom
thinly sliced
100genoki mushrooms
roots removed
15gginger root
grated
3 Tbsplight soy sauce
2eggs
green onions
finely chopped, optional garnish
sushi nori
shredded, seaweed “kizami nori”
Japanese chili powder
shichimi togarashi
toasted sesame oil
Instructions
Step 1
Cut chicken thigh into small pieces.
Step 2
Fry chicken skin until crispy, then set aside.
Step 3
Add dashi stock and sake to pot, bring to boil. Add chicken thigh.
Step 4
Rinse cooked rice in cold water to remove excess starch.
Step 5
When chicken is partially cooked, add rice, carrot, leek, mushrooms, ginger, and soy sauce.
Step 6
Once carrots soften, set timer for 5 minutes.
Step 7
Whisk eggs in a separate bowl.
Step 8
Pour whisked eggs around pot, cook for 30 seconds, then turn off heat.
Step 9
Serve and garnish with crispy chicken skin, green onions, nori seaweed, chili powder, and sesame oil.
