Prep your fresh ingredients
Step 1
Medium dice (roughly 1cm) of your carrots

Fine dice (roughly 0.5cm) of your shallots/onion
Step 3
Large dice (roughly 1.5cm) of your chicken breast

Finely slice the spring onions

Heat half the oil in a pan

Fry your carrots, shallots and chicken
Step 7
Add the rest of the oil and then add your leftover rice. Break it apart with your spatula.

Add your peas

Keep it moving until it's nicely mixed and you have individual grains of rice instead of clumps (use more oil if needed)
Step 10
Season with your soy sauce, ketchup and spring onions. Takoyaki or Yaki soba sauce is nice too if you have it

Serve immediately
