Chorizo potato frittata

Instructions

Step 1
1. Preheat oven to 180c. Fry chorizo in a large oven proof pan until fat starts to render. If necessary add some olive oil. 2. Add red peppers and cook til softened. 3. In the meantime, pre-cook your potatoes either by parboiling til just tender or by microwaving. 4. When potatoes are done, carefully slice thinly then add to the pan with a little more olive oil if needed. Season with salt and pepper. 5. Whisk eggs together well, then spread out ingredients evenly and pour eggs over. Scatter feta across the top and push in slightly. 6. Cook on stovetop for 6 minutes then transfer to oven. Cook as additional 5-10 minutes, til top has browned and set. 7. Scatter chopped fresh herbs over the top and serve.
