Creamy Cilantro and Basil Pesto Macaroni with Lemon Pepper Fish

Instructions

Step 1
Cook pasta as per packaging instructions.
Step 2
While waiting for pasta to be cooked, make the pesto mixture by placing all the ingredients (except oil) in a food precessor and pulse until combined and it looks like a rough paste. While food processor is running, pour oil in a steady stream and process until smooth. Set aside.
Step 3
When pasta is cooked, reserve 1/4 cup pasta water and drain, then set aside.
Step 4
To make the fish, season with salt and lemon pepper evenly on both sides.
Step 5
Heat up oil on a skillet or pan over medium heat and fry the fish until browned on both sides, about 8-10 minutes. Once cooked, set aside.
Step 6
Using the same skillet or pan, heat oil on medium, and add garlic. Cook until fragrant, about 30 seconds or so.
Step 7
Pour cream and mix. Then, turn off the heat and stir in the pesto.
Step 8
Add cooked pasta and toss to coat with the pesto. Add a little bit of pasta water, a little bit at a time, until you reach a perfectly smooth texture.
Step 9
Taste and adjust salt as needed, and serve immediately.
