Step 1
1. Prepare the Lentils: Rinse the red lentils under cold water until the water runs clear. Set aside.

2. Cook the Aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

3. Add the Spices: Stir in the cumin, smoked paprika, coriander, and curry powder. Cook for 1-2 minutes, or until the spices become fragrant.

4. Combine Ingredients: Add the tinned tomatoes (including their juice) and stir to combine. Cook for another 2 minutes.

5. Add Lentils and Liquid: Stir in the rinsed lentils and pour in the water or vegetable broth. Bring to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the lentils are tender and the stew has thickened.

6. Season: Taste and season with salt and pepper as needed.
Step 7
7. Serve: Garnish with fresh cilantro or parsley if desired. Serve the stew hot, with crusty bread or over rice.
