Sweet Pepper and Sun-Dried Tomatoes Cheesecake

I found a cheesecake recipe made with Tvorog (aka Farmer's Cheese), yogurt, eggs, starch, and apple puree. It has no sugar, a pleasant texture, and is easy to make—I loved it! Out of curiosity, I tried replacing apple puree with vegetable puree. The result is an incredible savory breakfast, healthy snack, or intriguing appetizer! Think about it as a formula for a cheesecake. Make it with apple, pear, or peach puree, and enjoy it as dessert. Make it with vegetable purees like sweet or chili peppers, tomatoes, pumpkin, herbs, caramelized onions, leeks, and garlic, and enjoy it as a savory dish. It can be without crust or with it. Next time I make a savory cheesecake, I'll add cubed bacon, ham, or smoked turkey breast for more fun! This recipe is for 6"D ramekin to make 2" high cheesecake.

Instructions
to make vegetable puree
Step 1
Peel and chop the onion. Drain and chop the peppers. Chop sun-dried tomatoes. Measure all ingredients for the pure.
Step 2
Saute onions in olive oil until lightly caramelized. Add other ingredients and cook over low heat, stirring until extra liquid is evaporated. Season to taste. Let cool to room temperature.

Preheat oven 325F.
Step 4
Line the bottom of a 2.5-inch deep baking dish with round parchment paper the same size as the bottom.
Step 5
Butter or oil the bottom and the sides of the ramekin/baking dish.
Step 6
Place all ingredients into a blender jar and process until smooth.
Step 7
Pour the mixture from the blender jar into the prepared baking dish.
Step 8
Bake in preheated oven for about 40 minutes for 2-inch high cheesecake. NOTE: Adjust timing for cheesecakes that are less or more thick. Timing also can be different depending on how liquidy your batter is before baking. The consistency depends on the dryiness of cheese and puree.
Step 9
Let the cheesecake cool and completely set, then remove it from the ramekin. Enjoy warm or cold. Keep refrigerated.
