Instructions

Sweet potato dip

Step 1
Dice the sweet potato and onion and chop the garlic and parsley.
Step 2
Heat the oil in the pan. Leave the heat on medium high. Add the sweet potato and fry for about 3-4min.
Step 3
Add the onion, garlic and seasoning and fry for another 1-2min.
Step 4
Add the vegetables to a blender and mix until smooth.
Step 5
Add the cream cheese and parsley and mix with a spoon.

Sandwich

Step 6
Cut the bread roll in half.
Step 7
Spread the bottom half with the sweet potato dip. Place the cheese slice on top.
Step 8
Bake in the oven at 180 degrees for about 2-3min until the cheese has melted.
Step 9
Sprinkle on the roasted onions and stack the other bread half on top and enjoy!
