Instructions
Step 1
Add the coconut oil to a frying pan over medium-high heat. Then add in the mushroom and garlic, cooking for a few minutes.
Step 2
Add in the tomatoes, cooking for a few further minutes until the mushrooms have softened.
Step 3
Add the shallot and chilli, sauteing for a few minutes. Season with salt and pepper.
Step 4
Now pour in the eggs, gently swirling back and forth from the centre of the pan with a spatula to scramble for a minute or so.
Step 5
Serve over the toast slices. Top with chives, feta and sriracha (if desired). Garnish with some alfalfa sprouts.
