White Chicken Chili
Flavorful White Chicken Chili, It’s comforting, hearty and so delicious. This chili features hearty beans and tender chicken, all simmered in a rich and creamy broth. It’s a lighter alternative to traditional beef chili.

Ingredients

5 tablespoonsunsalted butter

1 tablespoonolive oil

1onion
large, diced

5 clovesgarlic
minced

1 tablespoonchicken bouillon powder

1 tablespoonchili powder

1 teaspoonpaprika

1 teaspoonsalt

1 teaspoonblack pepper

½ teaspooncoriander

½ teaspooncumin

½ teaspoonoregano

¼ teaspooncayenne pepper

1can diced tomatoes and green chilies

1can black beans
drained and rinsed

1can red kidney beans
drained and rinsed

2 cupscorn frozen
or fresh

1can unsweetened coconut milk

1 cupheavy cream

1chicken broth

4 cupsshredded rotisserie chicken

2 tablespoonslime juice

3 tablespoonscilantro
chopped
Instructions
Step 1
1. Put a large saucepan or Dutch oven on medium-high heat. Add in the butter and oil, wait for the butter to melt.
Step 2
2. Add in the diced onions and garlic and sauté for 3-4 minutes.
Step 3
3. Next stir in all the seasonings and cook for 30 seconds.
Step 4
4. Then add in the diced tomatoes and green chilies, black beans, kidney beans, corn, coconut milk, heavy cream, chicken broth and stir everything together.
Step 5
5. Next add in the shredded chicken, stir well, cover and simmer on medium- low heat for about 20-25 minutes.
Step 6
6. Lastly Stir in the lime juice and cilantro. Serve and enjoy.
