Fava with grilled vegetables and yoghurt dressing

Instructions

Fava

Step 1
Put peas in water with salt, bay leaves and olive oil and cook for about 45min, or until it gets smushy. If you can't get yellow split peas, the green ones taste the same but look less beautiful.
Step 2
Cut the red onions in half circles and caramilze them, add minced garlic and add to the peas while that is cooking. Keep half an onion apart for the grilled veggies.

Grilled veggies

Step 3
Slice up the veggies and put in olive oil. Grill on medium in olive oil heat until softened with grill marks, around 25 minutes. Keep apart the green fluffy bits of the fennel.

Yoghurt dressing

Step 4
Combine 2 tbsp of Greek yoghurt, a splash of water, juice of half a lemon and the herbs to a runny sauce.

Plating

Step 5
Grill the naan bread in a grill, oven or pan.
Step 6
Remove the bay leaves, Blend the peas with the rest of the water, onions, garlic and lemon juice. It should have the consistency of humus. Bring to taste with pepper and salt.
Step 7
Plate the fava with the grilled veggies, dressing and green bits of the fennel. Eat together with the naan. Enjoy!
