Cajun Chicken and Rice

Chicken marinated: 2 Lbs Bonless skinless chicken thighs 1/2 Tbsp Sazon tropical 1/2 Tbsp Smoked paprika 1/2 Tbsp ( low sodium) cajun seasoning 2 Tbsp Olive oil Other ingredients 1 tbsp Olive oil 1 tbsp butter 1/2 red or yellow onion diced 2 Tbsp Minced garlic 2 cup cooked white rice Cream Sauce 2 Tbsp Butter 1 Tbsp Garlic powder 2 Tsp Tablespoons cajan seasoning 1/2 tbsp Smoked paprika 1 cup Heavy cream Instructions: 1. Start by marinating your thighs with the chicken marinade above! (allow to marinate for thirty minutes to twenty four hours in the refrigerator) 2. After the chicken is marinated melt down butter in a pan along with olive oil, 3. Once your butter begins to bubble add in your chicken and cook on each side for 5 to 7 minutes on medium heat for a total of 10 to 14 minutes or until internal temperature of 165° F 4. Next remove your chicken from the pan 5. In clean pan melt down your butter add in your diced onions, minced garlic, and a pinch of Cajun seasoning & sauté for 60 seconds on medium heat 6. Once your garlic and onions become fragrant, add in cooked rice and mix until all your rice is well coated with seasoning and remove from heat Cream sauce 1. For your cream sauce in a medium sauce pan, meltdown,your butter over medium to low heat, and adding all your ingredients for your cream sauce whisk and stir continuously until your sauce thickens, and is able to coat the back of your spoon 2. Add to chicken back into your rice and top with your cream sauce and enjoy!!
