Ingredients
6 servings

5 tablesoonsmirin

3 tablespoonssake

5 tablespoonssoy sauce

1 tablespoonred miso paste

5 tablespoonsturbinado sugar
or raw sugar

3garlic cloves

1 pieceginger root
about 1 1/4 inches

1 teaspoonshichimi togarashi

1.5 poundschicken breast
cut into 3/4 inch cubes

2 teaspoonslight sesame seeds

1green onion
green part only
Instructions
Step 1
Combine the mirin, sake, soy sauce, miso paste, sugar, garlic cloves, ginger, and shichimi togarashi in a small bowl. Place in a large freezer bag with the chicken. Seal the bag and marinate in the refrigerator for at least 2 hours










Step 2
Soak 10-15 skewers in warm water for 15 to 20 minutes shortly before preparing them

Step 3
Dive the chicken evenly among the skewers. Pour the rest of the marinade in a small bowl.
Step 4
If you are using a grill to prepare this dish, grill the skewers on all sides on the preheated grill for about 5 to 7 minutes, turning 2 or 3 times. Alternatively, cook them on medium-high for the same length of time in a large flat pan. While the skewers are cooking, brush repeatedly (every 2 minutes) on all sides with the remaining sauce



Step 5
If you are using the oven to prepare the skewers, preheat to 425, and line a baking sheet with parchment paper. Set the skewers on the pan and cook for about 8 to 10 minutes, turning several times and brushing the top sides of the skewers with some of the remaining marinade each time.



Step 6
Sprinkle the skewers with sesame seeds, garnish with green onion, and serve immediately
